Mission Figs

I am getting my second (main) harvest of Black Mission figs. Mission fig trees produce two harvests a year, one in spring (breba) and again in late summer or early fall. I picked a big basket this morning. The figs are so delicious eaten right off the tree, but I decided to prepare them for my late fall jam-making session.

I clean and freeze any excess harvest for jam making as the thawing process helps break down the fruit, requiring less cooking time. After washing the fruit, I cut off the ends and then cut them again in half lengthwise. I use two-cup measure containers for freezing as it saves measuring time when making jam. My favorite jam is a mix of pears and figs, which is great on crusty toast or served with roast chicken or pork.
