Green Goddess Dressing

I am a big fan of Gwyneth Paltrow. She is a smart, talented, healthy and beautiful woman. Her website Goop is a lifestyle publication offering an abundant of healthy recipes, travel notes, exclusive collaborations, health, fitness, mindfulness and self-discovery tips as well as style and design.  She also has published several cookbooks.

At this time of the year when fresh lettuces are abundant, there is nothing better than a salad with a fresh tasting dressing.  I love Green Goddess Dressing.  Many recipes are high calorie and full of fat.  Gwyneth’s cookbook It’s All Good, has my favorite Green Goddess dressing recipe so far.  If you have a favorite, please send it my way.

Green Goddess Dressing

Makes 1-1/4 cups

10 large basil leaves

3 tablespoons chopped chives

2 tablespoons cilantro (leaves from about 5 sprigs)

1/4 cup Italian parsley (leaves from about 5 sprigs)

Leaves from 1 sprig of tarragon

2 scallions, white and green parts only, roughly chopped

1/2 ripe avocado

1/4 cup Vegenaise (available at most grocery stores)

2 tablespoons raw honey or xylitol (I use honey)

2 tablespoons white wine vinegar

Juice of 1 lemon (about 1/4 cup)

3 tablespoons extra virgin olive oil

1/4 water

1/2 teaspoon coarse sea salt

1/4 teaspoon freshly ground black pepper

Combine all ingredients in a blender and puree until completely mixed. Keeps well in a jar in the fridge for up to a week. YUM
